The news is, undoubtedly, quite unnerving right now. With an uncertain future, a shaky economy, and the fear of what this pandemic might actually look like in the weeks and months to come, it’s with good reason that many of us feel a bit scared. One of the scariest parts of our current situation is that we have very little control.

One of the ways I grapple with the loss of control is by controlling the things I can. That means keeping a clean and safe house filled with activity, love, and food. After recently purchasing a chest freezer, I've been cooking up a storm and filling up my freezer with easy freezer meals.

Freezer meals give me the confidence in knowing we have a house full of hearty, veggie-packed meals as well as the convenience of easy to make dinners during a time we are all stretched quite thin between working from home and homeschool our children.

What makes a good freezer-friendly recipe?

A good freezer meal is hearty, filled with protein, packed with vegetables, stores easily, and reheats without compromising the taste and texture of the dish. Typically, casserole, lasagna, stir fry, soups, and pasta all make good vegan freezer meals.


How to prepare frozen foods

Here are a few things to keep in mind when preparing freezer meals.

  1. Get the right Tupperware. Make sure you have a set of Tupperware with tight-fitting lids. It is important that your food can remain in airtight containers to stay as fresh as possible. Stir fries, curries, and rice dishes can be stored in smaller Tupperware. A set of freezer safe casserole dishes with lids are best for lasagnas, enchiladas, and casseroles.   2. Follow the instructions. In most cases, you will complete the cooking process before freezing the food. However, for certain recipes, especially casserole-type dishes, the instructions may have you freeze before baking. If you are baking straight from the freezer, adjust your cooking time by adding 10-15 minutes.
  3. Date your food. Food typically lasts in the freezer for about 3-6 months before it starts to get freezer burnt. Make sure to always be marking the date on your freezer foods and rotating them as needed.

This One-Pot Teriyaki Tofu and Rice is the perfect freezer meal. It is hearty, filled with protein and vegetables, and can be made in just one pot.

Store this meal in freezer friendly Tupperware containers for up to 3 months. To serve, gently reheat in the microwave for 5-7 minutes. You can also let it thaw overnight in the refrigerator. Once it is thawed, gently reheat it on the stovetop until heated all the way through.

Vegan Black Bean Enchiladas

Black Bean and Kale Enchiladas

Black Bean and Kale Vegan Enchiladas are a perfect go-to freezer meal. Enchiladas are filling, packed with vegetables, and they store super well.

Make this recipe in a freezer-friendly casserole dish with a tight-fitting lid. Assemble the enchiladas according to the instructions. Rather than baking the recipe, cover and freeze for up to 3 months. When ready to eat, remove the cover, top with tin foil, and bake for about 60 minutes at 350F until heated all the way through.

Vegan Eggplant Parmesan

Vegan Eggplant Parmesan

Another freezer-friendly casserole dish is this Vegan Eggplant Parmesan. This delicious recipe is made with homemade plant-based parmesan and mozzarella cheeses for a super satisfying dinner.

Assemble the Eggplant Parmesan according to the instructions. Prior to the final bake, cover and freeze it for up to 3 months. When ready to eat, remove the cover, top with tin foil, and bake for about 45 minutes until heated all the way through.

Vegan Tikka Masala with Soy Curls

This Vegan Tikka Masala is as delicious from the freezer as it is straight from the stovetop. It's an Indian-spiced masala sauce stewed with marinated soy curls served over cilantro rice.

Store this meal in Tupperware containers for up to 3 months. Gently reheat in the microwave for 3-4 minutes or let it thaw overnight in the refrigerator. Once it is thawed, gently reheat it on the stovetop or oven until heated all the way through.

Coconut Curry with Tofu

You’re going to love this rich and creamy Coconut Curry with Tofu. It's hearty, delicious, and filled with vegetables, making it the perfect vegan freezer meal.

Store this meal in Tupperware containers for up to 3 months. Gently reheat in the microwave for 4-5 minutes or let it thaw overnight in the refrigerator. Once it is thawed, gently reheat it on the stovetop or oven until heated all the way through.

Spinach and Mushroom Vegan Lasagna

Lasagna is a classic freezer meal and this Vegan Mushroom and Spinach Lasagna is no exception. It is a delicious family meal that you can enjoy for months.

Vegan Bolognese with Zucchini Noodles

Mushroom Bolognese Sauce

This vegetarian Mushroom Bolognese Sauce is filled with flavor, packed with protein, and stores perfectly.

Store this pasta sauce in freezable Mason Jars for up to 3 months. Let it thaw overnight in the refrigerator before serving. Once the sauce is thawed, gently reheat it on the stovetop or microwave until heated all the way through. Served it over pasta noodles or zucchini noodles for a hearty vegan and gluten-free dinner.

    I’ve tried freezing in quart canning jars and they break. Please don’t freeze in anything other than pint sized jars.
    Can’t wait to try these recipes!
