This super simple and easy recipe calls for just a few ingredients, most of which you probably already have in your pantry. For such a simple recipe, you won't believe how decadent this chocolate pudding tastes.

Here's everything you need:

Ingredient Notes

  • Cacao Bliss - This incredible superfood powder is a mix of 10 healthy ingredients, including cacao, turmeric, black pepper, and MCT oil. I love getting so many different health benefits from just one scoop! Read more about it below.
  • Coconut Cream - Not to be confused with coconut milk, coconut cream is the vegan equivalent of heavy whipping cream and can generally be used in place of cream in plant-based cooking. While the fat content is rather high (this is dessert after all), it is important to get this pudding to set up properly.
  • Maple Syrup - Maple syrup is the sweetener I usually reach for, but you can easily substitute agave nectar, date syrup or coconut sugar instead. You may also find that the Cacao Bliss is sweet enough, in which case this can be omitted.

Step-by-Step Instructions

Step One - Heat and Stir

In a small saucepan combine coconut cream, Cacao Bliss, and maple syrup. Place it over medium heat and bring it to a simmer, stirring frequently.

Once the chocolate pudding base comes to a simmer, remove it from heat. You should have a smooth, thick, chocolatey base. Stir in vanilla extract and salt. Taste and adjust seasonings.

Step Two - Divide and Refrigerate

Divide it into three small pudding cups. Wrap in plastic wrap and refrigerate for at least 2 hours, until the pudding has set. When it has set, it will have a slight wobble.

Serve immediately or store for up to 2 days.

Serving and Storing

Serving - Allow the healthy chocolate pudding at least 2 hours to set up in the refrigerator. I find it is best to allow it to rest overnight. Serve chilled with your choice of toppings. Whip some extra coconut cream, add fresh berries or cacao nibs. Yum!

Storing - Store leftover pudding covered in the refrigerator for up to 5 days.

Tips and Tricks

  1. Can't find a can of pure coconut cream? Don't fret! You can buy cans of regular coconut milk, open them without shaking, and scoop off the solid coconut cream you find at the top. (Save the milk portion for later use.) In order to get a full 14.5 oz, you'll likely need about 4 cans of coconut milk.
  2. Want to switch up the flavor profile? Try swapping in ½ teaspoon of almond extract for the vanilla to make a healthy chocolate amaretto pudding. Or try adding in ¼ teaspoon each of cayenne and cinnamon for a Mayan chocolate pudding experience.

Frequently Asked Questions

Can I substitute canned coconut milk for the coconut cream?

Unfortunately, no. Canned coconut milk simply doesn't have enough fat in it to get the pudding to set up. If you use coconut milk, you'll end up with a very delicious pot of healthy hot chocolate.

Is this a keto friendly dessert?

At 15 net carbs per serving, this healthy chocolate pudding might be a little over what someone on the keto diet would want to consume. That said, you can easily swap out the maple syrup for a keto friendly sweetener to cut between 9-13 grams of carbs per serving size.

Can I use this healthy chocolate pudding as a filling for pies?

I don't see why not! That said, you may need to adjust the recipe size in order to make enough to fit a regular sized pie crust. I would also recommend giving your pie an entire day to set up in the fridge to ensure the best results.

Ingredients

  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

    Good morning people!
    I just checked what MTC is, and it looks like it isn't so healthy in the form of powder, and should be used in the original oil form...
    This looks delicious, though, and I think I'll make an adapted version of it!
