Despite their rather impressive appearance, there’s nothing fussy going on here. These easy corn fritters come together with the simplest ingredients, cook right on the stovetop, and are ready in about 30 minutes. Even the jalapeño lime crema can be whipped up quickly in a blender or food processor.

Extra Flavor Packed in Each Bite
The corn gets charred in a skillet before getting mixed into the batter, and that’s exactly where all the smoky elote flavor hides. Though most recipes skip this extra step, it’s well worth the few extra minutes, I promise.

Ingredients for Crispy Corn Fritters
Roasted Jalapeño Lime Crema
- Jalapeño. We’re going to roast the jalapeño first to soften its sharp, grassy flavor. To reduce the heat, scrape out the seeds and membranes after roasting; leave some in if you like a kick.
- Vegan sour cream. The creamy-tangy base of our jalapeño lime crema sauce.
- Vegan mayonnaise. I love to make mine at home (only when I’m feeling fancy 😆); otherwise, store-bought works fine, too.
- Garlic. One fresh clove gives the sauce just enough garlicky bite. Since everything gets blended together, you can toss it in whole and let the food processor do the chopping for you.
- Lime juice + a bit of lime zest. Definitely go fresh here for the brightest flavor.
- Cilantro. Loosely pack it into the measuring cup; there’s no need to squash it down.
- Ground cumin. ¼ teaspoon adds a warm, earthy background note. It’s intentionally a small amount; you want it to support the jalapeño and lime rather than announce itself.
- Kosher salt. If you’re using table salt instead, start with a little less since it measures saltier by volume, then taste and adjust after blending.
Corn Fritter batter
- Fresh sweet corn. Fresh really earns its place here, especially in during the maze season. You’ll use the kernels three ways: some stay fresh, some get lightly charred, and a small portion is blended with the oat milk. That gives your sweet corn fritters plenty of corn texture while helping create a creamy batter. Tip: Five ears should give you roughly 4 cups of kernels.
- All-purpose flour. You only need enough to hold the corn together without entirely burying it in a pancake-like coating. I’d suggest spooning the flour into the cup (instead of packing it down) to make sure you’re not adding too much.
- Fine cornmeal. A little cornmeal doubles down on the corn flavor. ‘Fine’ is the key here, as a coarse grind will make the fritters gritty.
- Cornstarch. Another one of the helpers behind those crisp edges. Cornstarch also reduces the amount of gluten-heavy flour needed.
- Baking powder. Gives the batter a little lift so the fritters don’t turn out overly dense.
- Seasonings. I used kosher salt, garlic powder, smoked paprika, and black pepper. You can increase/decrease the amounts depending on the spice level you prefer.
- Green onions. Slice both the white & green parts thinly to scatter them throughout the batter.
- Red bell pepper. Aside from that pretty pop of red, bell pepper adds a little sweetness & crunch. Again, I’d recommend dicing it finely.
- Cilantro. You can use some of the same bunch you bought for the crema.
- Unsweetened oat milk. Part of the corn gets blended with oat milk to create a naturally creamy mixture for the batter. Stick with unsweetened and unflavored oat milk because we don't want vanilla sneaking into our crispy corn fritters.
- Lime juice. That little splash of acidity keeps the fritters tasting bright (not overly rich/dense).
- Avocado oil. Two tablespoons go directly into the batter, and you'll need extra for frying. Its neutral flavor lets the corn and seasonings do their thing, and its high smoke point makes it a handy choice for skillet frying.

For Serving
- Lime wedges. Pile a few onto the serving plate and give those fritters one last squeeze of lime before digging in. A little extra tang never hurts here.
- Cilantro. I love an additional sprinkle of cilantro at the end to give my vegan corn fritters a nice pop of green + a refreshing kick.
- Sliced jalapeño. Totally optional, but perfect if you want to turn up the heat.
How to Make Easy Corn Fritters

1. Whip the Jalapeño Lime Crema
Roast the jalapeño under the broiler or over an open flame until the skin is blistered and blackened. Place it in a bowl and cover for 5 minutes, then peel away most of the skin. Remove the seeds if you’d like a milder sauce.
Next, add the roasted jalapeño, vegan sour cream, mayonnaise, garlic, lime juice, lime zest, cumin, cilantro, & salt to a food processor (or blender). Blend until smooth and refrigerate while you prepare the fritters.

2. Prep & char the Corn
Cut the kernels from the corn. Measure out about ½ cup and blend it with the oat milk until mostly smooth. This creates a naturally creamy batter without adding extra flour.
Heat a dry cast-iron skillet over medium-high heat. Add about 1 cup of the remaining corn kernels and cook for about 3 to 4 minutes, stirring occasionally, until lightly charred. Let them cool for a couple of minutes.

3. Make the Fritter Batter
In another large bowl, whisk together the cornmeal, flour, cornstarch, baking powder, salt, garlic powder, smoked paprika, and black pepper.
Then, add the remaining fresh corn, the charred corn, the blended corn mixture, green onions, bell pepper, cilantro, lime juice, and 2 tablespoons avocado oil. Stir just until everything is evenly coated. The batter should be thick enough to hold together while still showing plenty of whole corn kernels.

4. Fry the Corn Fritters
Pour about ¼ inch of avocado oil into a large skillet and heat over medium heat. Once the oil is shimmering, scoop about ⅓ cup of batter per fritter into the pan and gently flatten each to about 3½ inches wide.
Cook for 3 to 4 minutes per side, or until deeply golden & crisp. Transfer the fritters to a wire rack while you cook the remaining batches.
5. Serve & Enjoy
Serve warm with the roasted jalapeño lime crema, fresh cilantro, sliced jalapeños (if desired), and plenty of lime wedges.

Tips & tricks
- Remove all extra moisture. Canned or frozen corn will loosen the batter and make the fritters steam. Not exactly the results we want.
- Keep the batter super corn-heavy. The binder (flour) should only be enough to hold the batter.
- Preheat the skillet & oil properly. The fritters are supposed to start sizzling as soon as they touch the pan.
- Flatten each fritter slightly, because thick mounds will brown on the outside but remain undercooked on the inside.
- Place on a wire rack once you’re done frying. Stacking hot fritters will trap steam and soften their crust.
FAQs
First, shuck the corn and remove as much of the silk as you can. Then, stand the ear of corn upright in a large bowl and carefully run a sharp knife down the sides. Tip: Cut close to the cob so you get the whole kernels. Keep rotating the ear until you’ve worked your way around it. The bowl is important here, unless you fancy chasing runaway corn kernels across the kitchen 😂
Your corn fritters might not be binding together properly due to either one (or both) of the following reasons:
1. There’s too much liquid in the batter.
2. You flipped the fritter too early (give it 3 to 4 minutes).
You can, although freshly fried is when they'll be at their crispiest. If you're reheating leftovers, use the air fryer (or oven) to bring back some of that crunch.

Notes
- Fresh corn gives the sweetest flavor and crispiest texture, but frozen corn (thawed and well-drained) will also work.
- Don’t overcrowd the pan. Cooking in batches helps the fritters crisp instead of steam.
- A wire rack keeps the bottoms crisp while the remaining fritters cook.
- If your batter feels too loose because the corn is especially juicy, add 1 to 2 tablespoons of flour. If it seems too thick, stir in a splash of oat milk.
