Equipment

Ingredients

  • 1½ lbs carrots peeled and sliced diagonally into ½-inch pieces
  • 2 tablespoon olive oil
  • 2 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced
  • ½ teaspoon Morton kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon vegan butter optional

Instructions

  • Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  • Peel the carrots and slice diagonally into ½-inch pieces. Place them on the prepared baking sheet.
  • Drizzle with olive oil and season with salt and pepper. Toss until evenly coated and spread into a single layer.
  • Roast for 20 minutes, flipping halfway through, until the carrots begin to soften and develop golden edges.
  • Meanwhile, whisk together the maple syrup, Dijon mustard, minced garlic, and fresh thyme in a small bowl.
  • Remove the carrots from the oven and drizzle with the maple glaze. Toss until evenly coated.
  • Return to the oven and roast for another 8–12 minutes, until the carrots are tender and lightly caramelized.
  • Remove from the oven and toss with apple cider vinegar and vegan butter, if using. Garnish with additional fresh thyme and serve warm.

Notes

  1. Make Ahead: Peel and slice the carrots up to 2 days in advance. Store in an airtight container in the refrigerator. Prepare the glaze separately until ready to roast.
  2. Storage: Store leftover carrots in an airtight container in the refrigerator for up to 4 days. Reheat in a 375°F oven until warmed through.
  3. Variations: Substitute fresh rosemary for thyme, add a pinch of red pepper flakes for heat, or use rainbow carrots for a colorful holiday presentation.
