Ingredients
Caesar Salad
  • 4 cups romaine lettuce, chopped
  • 4 cups kale, chopped
  • 2 cups bread, cut into 1/2" cubes
  • 2 tablespoons olive oil
  • salt and pepper
  • 2-4 tablespoons hemp parmesan, recipe follows
  • vegan caesar salad dressing, recipe follows
Hemp Parmesan
Caesar Salad Dressing
  • 1/2 cup vegan mayo
  • juice of 1 lemon
  • 3-4 garlic clove
  • 2 tablespoon vegan Worcestershire sauce
  • 1-2 tablespoon hemp parmesan, to taste
  • 2 teaspoon Dijon mustard
  • 1 teaspoons capers
  • salt and pepper, to taste
Instructions
  1. Preheat the oven to 375 degrees F.
  2. Toss the cubed bread in olive oil, salt, and pepper and place in a single layer on a baking sheet. Bake for 12-15 minutes, until lightly golden brown and crunchy.
  3. Meanwhile, mix together the ingredients for the hemp parmesan in a food processor until hemp hearts have broken. Set aside.
  4. In a blender or food processor combine the ingredients for the Caesar Salad Dressing and blend until completely smooth.
  5. Assemble the salad by tossing the kale and romaine in a large bowl with the Caesar Salad Dressing. Top with croutons and hemp parmesan.
  6. Serve immediately.
