Ingredients

Sweet Potato Chips

  • 2 large sweet potatoes, peeled
  • 2 tablespoon extra virgin olive oil
  • 1 ½ -2 tablespoon BBQ seasoning mix, recipe follows

BBQ Seasoning Mix

  • ¼ cup brown sugar
  • ¼ cup paprika
  • 1 ½ teaspoon chili powder
  • 1 ½ teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

Instructions

To make BBQ Seasoning

  • Mix all ingredients together until well combined. Store in an airtight container.

To make Sweet Potato Chips

  • Preheat oven to 400 degrees Farenheit.
  • Slice sweet potatoes as thinly as possible. I used a mandolin set on 3mm.
  • Toss potatoes in olive oil and BBQ seasoning mix until well coated.
  • Place on parchment lined baking sheets in a single layer.
  • Bake for 20-25 minutes, flipping once half way through, until cooked all the way through.
  • Let cool completely before devouring.
