Vegan  Miso Soup

Ingredients You'll Need:

– coconut or sesame oil – yellow onion – garlic cloves – fresh ginger – bok choy leaves –  tofu – vegetable broth – yellow miso – handful of spinach – green onions

Step One

Saute onions until translucent and fragrant. Stir in the garlic and ginger and cook for another minute. Add the bok choy and tofu. Pour in the vegetable broth and bring to a boil then reduce heat and let simmer.

Step Two

Stir in the miso, spinach, and green onions. Remove from heat and serve.
