Ingredients You'll Need:

Step One

Bring the rice, along with 2 cups of water, to a boil. Cover and reduce heat to simmer until all the water has evaporated. Set aside.

Step Two

Mix together the ingredients for the 5-Minute Thai Peanut Sauce.

Step Three

Drain and cube the tofu. Add the tofu to the hot oil and sauté for 5 minutes, until brown on all sides.

Step Four

Add oil to a separate pan and sauté broccolini until cooked all the way through and slightly charred on the outside.

Step Five

Assemble and serve with green onions and peanuts.

Recipe Tips and Tricks:

- Look for high-protein extra-firm tofu.  - Heat the sauté pan so that it’s hot before adding the tofu. The tofu should sizzle when it hits the pan.  -Save on time and use store bought peanut sauce.
