This salad is fantastic. The dressing is perfect and the mix of herbs and vegetables is wonderful. This is a lovely, delicious meal. I pair it with romaine lettuce and will be trying it will millet later this week. Thanks for a wonderful recipe.

Ingredients You'll Need:

Step One

Combine olive oil, red wine vinegar, lemon juice, maple syrup, garlic, salt, and pepper. In a jar with a tight-fitting lid, vigorously shake the dressing ingredients until combined.

Step Two

Cut the tomatoes and cucumbers so that they are similarly sized and not much bigger than the chickpeas to ensure that the salad is able to blend together well.

Step Three

Drain and rinse the chickpeas, and place them in a big bowl along with all of the veggies.

Step Four

Toss veggies and chickpeas with salad dressing and serve immediately.
