Roasted Garlic Hummus
  • 2 cups canned chickpea, drained and liquid reserved
  • 1/4 cup tahini paste
  • 2 tablespoons olive oil
  • juice of 2 lemons
  • 10-12 cloves roasted garlic
  • 1/4 cup reserved chickpea liquid
  • 3/4 teaspoon cumin
  • salt to taste
Toppings (optional)
  • olive oil
  • fresh parsley
  • roasted garlic
  • paprika
  1. Roast garlic according to these directions.
  2. In a food processor combine chickpeas, tahini, 2 tablespoons olive oil, lemon juice, roasted garlic, reserved chickpea liquid, cumin, and salt. Blend until very smooth, scraping down the sides as needed.
  3. Serve with desired toppings and crackers, pita, or vegetables.
  4. Store in an airtight container in the refrigerator for up to 5 days.
