Vegan Garlic Mashed Potatoes

Rich and creamy vegan garlic mashed potatoes mixed with roasted garlic and vegan cream cheese for an unbelievable delicious potato dish. Serve with Portobello Mushroom Gravy at your next holiday meal.

Ingredients

  • 2 pounds red skin potatoes, washed and quartered
  • 2 bulbs of roasted garlic
  • ¼ cup olive oil
  • ¼ cup vegan cream cheese or 2 tablespoons non-dairy milk
  • salt, to taste

Instructions

To roast garlic

  • Preheat the oven to 400 degrees F. Cut off the tops of 2 garlic bulbs. Place in a piece of tin foil, drizzle with olive oil and cover. Bake for about 20 minutes, until garlic is soft all the way through. Remove from the oven and set aside.

To make the mashed potatoes

  • In a large stockpot bring 6 cups of water to boil. Add prepared potatoes and boil until soft, about 12 minutes. Drain and transfer to a large bowl. Let cool for a few minutes.
  • Add garlic, salt, olive oil, and cream cheese to potatoes and with a handheld mixer or potato masher, mash potatoes to desired consistency.
  • Serve with mushroom gravy
