Ingredients

  • 2 tablespoon dried goji berries
  • 1 tablespoon chia seeds
  • 1 large frozen banana, chopped
  • 1 ½ cups fresh spinach or kale, packed
  • 1 stalk of celery, chopped
  • ½ Granny Smith apple, chopped
  • 1 cup coconut water

Instructions

  • Soak the goji berries and chia seeds separately for 15 minutes until the goji berries have rehydrated and the chia seeds are gelatinous and thick. Drain any excess water.
  • Place all the ingredients in a high-powered blender or food processor and blend until all the ingredients are incorporated and the mixture completely smooth.
  • Serve chilled.

Notes

Depending on the strength of your blender, you may want to pour the smoothie through a strainer before drinking.
