All-purpose flour Baking soda Ground Cinnamon Ground Ginger Ground Nutmeg Ground cloves Salt Pumpkin puree Granulated sugar Brown sugar Unsweetened applesauce Coconut or olive oil Vanilla extract

Step One

In a medium bowl, combine flour, baking soda, spices, and salt. In a separate bowl, whisk together pumpkin puree, sugars, apple sauce, oil, and vanilla extract.

Step Two

Combine the wet ingredients with the dry, mixing until you have a uniform batter. Fold gently.

Step Three

Pour the batter into a prepared loaf pan and bake for about 60 minutes at 350 F. Allow to cool, top with glaze and pecans and serve.

- Do not overmix your batter. Overmixing allows the gluten to develop and too much gluten will give you gummy and dense bread. - Applesauce varies a lot. If your applesauce seems thin, first strain it through a fine-mesh strainer to get the excess liquid out.
