Vegan  Pasta Salad

Ingredients You'll Need:

fusilli pasta cherry tomatoes black olives red onions vegan mozzarella Italian parsley extra virgin olive oil red wine vinegar maple syrup salt and pepper

Step One

Cook the pasta according to package instructions then strain through a colander and rinse with cold water until the pasta has cooled.

Step Two

Add olive oil, red wine vinegar, maple syrup, and salt and pepper to a blender. Blend until well combined.

Step Three

Add pasta to a salad bowl and toss with the red wine vinaigrette. Add remaining ingredients and stir to combine.

Step Four

Serve immediately or store in an airtight container in the refrigerator until ready to serve!
