This is the best vegan macaroni and cheese I have ever tasted! I have made this 2 times now, following the recipe exactly, and it's simply perfect! Creamy, tangy, cheesey and so, so satisfying. I will never miss non-vegan macaroni and cheese again; this is better!

Ingredients You'll Need:

Macaroni noodles Sweet potato Carrot Cooking oil Yellow onion Garlic Unsweetened cashew or macadamia nut milk Raw cashews Nutritional yeast Sun-dried tomatoes Spicy mustard Lemon juice Salt

Step One

Add the milk, cashews, nutritional yeast, sun-dried tomatoes, mustard, lemon juice, and salt to the blender and blend until smooth. Add sweet potato, carrots, onions, and garlic and blend again. Pour sauce over cooked noodles.

Step Two

Once the pasta and sauce are ready, combine them together in a large cast-iron skillet, stirring together to ensure that the pasta is fully and evenly sauced.

Step Three

Mix together the ingredients for the crumb topping and evenly spread over mac and cheese, patting down as necessary. Bake for 20 minutes.
