Vegan Fried Rice with Tofu

Ingredients You'll Need:

Step One

Press the tofu for about an hour to drain out as much water as possible. Pat the tofu dry and cut it into ½″ cubes.

Step Two

Heat the oil over medium-high heat. Add the tofu and sauté for about 5 minutes, stirring often, until the tofu is brown on all sides. Remove from heat and set aside.

Step Three

Sauté the onions for 5-7 minutes, stirring occasionally, until translucent. Add the ginger and garlic and sauté for another minute.

Step Four

Once fragrant, add the carrots, mushrooms, and peas and cook until tender and the mushrooms have reduced in size.

Step Five

Add cooked rice and sauté for 2-3 minutes, stirring frequently. Stir in vegetables, add tofu, cashews, and sauce and stir to combine.

Recipe Tips and Tricks:

- Do not overcook the rice! It'll get mushy and won't stir fry as well. - Use a non-stick wok or skillet so the tofu doesn't get stuck to the bottom. - Feel free to swap out the veggies for whatever you prefer!
