Ingredients You'll Need

-Jackfruit -Celery -Red Onions -Pickles -Vegan Mayo -Fresh Dill -Spicy Mustard -Lemon juice -Salt and pepper

Step One

Drain and rinse the jackfruit through a colander. Shake out any excess water. Lay the jackfruit on a paper towel and pat dry.

Step Two

Dice all your vegetables and herbs into uniform pieces and set aside

Step Three

Combine all the ingredients in a large mixing bowl and stir until the salad is combined. Serve it over a bed of lettuce or in between a baguette for a vegan chicken salad sandwich

Recipe Tips and Tricks:

-Dice your veggies small to get all the flavors in every bite - If you don't have jackfruit you can use tempeh or mashed chickpeas  -It's versatile!  Add apples, raisens, craisens, walnuts or whatever you like in it
