Vegan Banana Bread (No Sugar Added)

Ingredients You'll Need:

Step One

Drain the dates and place them in a food processor with the bananas, applesauce, coconut oil, and vanilla extract.

Step Two

Blend the ingredients until a smooth purée forms. Scrape down the sides of the food process a couple of times to make sure you get all the bananas and dates.

Step Three

In a large bowl, whisk together the dry ingredients. Use a wooden spoon to mix the date/banana mixture into the dry ingredients until combined. Mix in walnuts.

Step Four

Pour the batter into a prepared loaf pan and bake for about 50-60 minutes, or until a toothpick comes out clean, at 350 F.

Recipe Tips and Tricks:

- Soak your dates for 20 minutes before blending. - Use very ripe bananas, this will add sweetness to the bread, especially since there is no added sugar. - Do not overmix your batter!
