Tomato Basil Bruschetta

  • Preheat oven to 450 degrees F. Slice the baguette into 1" slices and lay flat on a baking sheet. Bake for about 10 minutes until crispy and slightly brown around the edges. Remove from the oven and let cool.
  • Meanwhile, in a small bowl combine the cherry tomatoes, cubed cheese, fresh basil, and salt. Taste and adjust seasoning. 
  • Once the bread is cool, spoon 1-2 heaping tablespoons of tomato basil mixture onto each baguette. Repeat until all of the baguettes is used. Serve immediately. 

Notes

Serving and Storing - If you're wanting to get a little fancy, drizzle it with a little bit of Balsamic Reduction just before serving. Store the toasted baguette and tomato basil topping separately. The baguette should be stored in a Ziplock bag or airtight container at room temperature for up to 2 days. Tomato basil filling should be stored in the refrigerator for up to 3 days.
