Friends! My favorite month of the year – October – is almost over. Fall is winding down as we move quickly into holiday season.
Last month I started a new series here on the blog – The BEST Of. The BEST Of is a monthly post dedicated to reflecting on the grandest moments from the past few weeks.
These monthly pause-and-reflects are a chance for me to share what I’ve been doing, drinking, eating, reading, and loving the past few weeks as well as revisiting YOUR favorite recipes of the month. Then I’ll wrap up with a little preview into what’s to come. I’m excited about these monthly pause-and-reflects as it gives me a chance to touch in with you all and share a little more of me than just the recipes I create.
So let’s get started.
It was a lovely October! Pumpkin patches, autumn baking, pumpkin carving, and a lovely trip to New England to see the fall foliage. Spoiler alert: it was colorful!
This month was simply magical. Not only has the weather been beyond beautiful but, in my personal life, the plates of the earth are shifting underneath me as I prepared for some big BIG changes. I can’t be more excited about how the next few months will unfold. Still a little too early to talk about it in detail, but friends, it’s good.
But that’s not all I’ve been up to this October.
What I’ve been…
Doing – I have been spending my free time fixing up my old home. A couple years ago I started building a brick patio and fire pit in my backyard (based off this tutorial) which I’m finally finishing this coming weekend. I’m also very excited to announce that after 3 1/2 years, I am closing my Airbnb and reclaiming the other half of my home! The Airbnb has been one of my biggest stresses and yet given me the opportunity to live my biggest dreams (such as become a full time food blogger!). So it is with relief and gratitude that I shut its doors.
Drinking – Have you heard of Dry Farm Wines? It’s an exciting new wine club dedicated to natural, healthy, ALWAYS vegan wines. Monthly they mail out 6 bottles of additive and sugar-free wine. Wine right to my doorstep! And here’s the best part: you can get your first bottle for only a penny! I recommend checking them out.
Eating – I can’t get enough of these Pomegranate Balsamic Portobello Steaks. I’ve been making it for dinner along with Roasted Brussels sprouts and carrots at least 2 times per week. I’ve also kept a batch of my Ginger Molasses Cookies on hand all season. Have you tried them yet?
Wearing – It’s that time of year for all the scarfs, sweaters and jackets. I’m loving this faux-leather jacket I bought last year. It’s the perfect light-weight October coat.
Dreaming – Now that I’m going to have more space in my house, I’ve been dreaming up what to do with my extra room. I’d like to make it an office/yoga studio where I can set up an actual desk and start getting a little organized as well as create a small space to keep my yoga gear. Starting this weekend, I’m going to be doing some serious rearranging!
Wanting – I’ve been struggling to find a good vegan ankle boot this fall. But I’ve had my eye on these from Amazon. Practical, versatile, cute, and 100% VEGAN!
Loving – I have been loving my Instant Pot these last couple of weeks. Ever since I pulled it out to make my Maple Bourbon Chili, I have been reminded at how easy it makes dinner preparation. I’ve been loving it so much that I have a couple more IP recipes coming at you next month!
