Today I am reviewing a very special new book, from one of the most-loved bloggers on the internet and someone I consider a friend, Vegan Richa. After her first book, Vegan Richa’s Indian Kitchen became an instant success and best-seller, Richa decided to go at it again, this time creating a cookbook with every day flavors from around the world. Vegan Richa’s Everyday Kitchen is everything you love about her blog AND MORE. Wanna see what I’m talking about?

I’m sure most of you are familiar with Richa’s wildly popular blog, Vegan Richa. So you already know she makes some of the most creative and stunning vegan food. It is no surprise, then, that her cookbooks are absolutely gorgeous. And just like her first book, Richa has creates something truly impressive with Vegan Richa’s Everyday Cooking, a book that celebrates bold flavors and easy vegan cooking that allows you to have delicious meals every night of the week.
With over 200 pages of mouth-water vegan recipes, this book has something for everyone!
Let’s take a closer look as to why I love this book.
1. Nearly all the recipes in this book are accompanied with beautiful, full-page photography. Richa has a remarkable eye for food photography that makes her recipes jump off the page in a dazzling and mouthwatering way. I LOVE this clean and simple look which allows the food to really speak for itself in every picture.
2. The recipes in this book are truly inspired. With an emphasis on creating rich and bold flavors, Richa shows you that sauce is the base of every good meal. With a few good sauces, there are endless possibilities. As you would expect, you will find an eclectic array of creative recipes that are based on these sauces. In the book you’ll find recipes like Firecracker Jackfruit Sandwiches, Berbere Tofu Bowl with Couscous, Spinach-Artichoke Lasagna with Cauliflower Alfredo, Tiramisu Fudge Bars, and much much more.
3. The book ends with one of my favorite chapters, “My Everyday Kitchen”. This is a comprehensive guide of the necessary ingredients for a well-stocked vegan pantry. Along with each item you’ll find tips on how to select, store, and prepare each of these ingredients. For people new to plant-based eating, this is key to success.
So you wanna see what I’m talking about?
Let’s take a look at the Easiest Black Bean Burgers pictured below.
If you have never made burger patties, these are the ones you want to make first. With a simple list of ingredients—such as beans, walnuts, oats, and spices—you can kick-start your veggie burger adventure here. Serve with your favorite burger fixings.
- 1/2 cup 60g raw walnuts
- 1/2 cup 40g old-fashioned oats
- 2 cloves garlic
- 1 1/2-inch [1cm] knob fresh ginger, peeled and coarsely chopped
- 1/4 cup 30g coarsely chopped onion
- 1 to 2 tablespoons pickled jalapeño slices
- 1 15-ounce [425g] can black beans or 1 1/2 cups (250g) cooked black beans, drained and rinsed
- 1/4 cup 10g coarsely chopped cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper or more to taste
- 1 tablespoon ground flax seed or chia seed
- 2 to 3 tablespoons 10 to 15g dry breadcrumbs or flour (gluten-free if necessary)
In a food processor, combine the walnuts, oats, garlic, ginger, onion, and jalapeños and pulse a few times, until the walnuts and onions are evenly chopped, 5 to 10 seconds. Add the beans, cilantro, cumin, oregano, chili powder, salt, pepper, and flax seed and process in 5-second intervals, until most of the beans break down. Do not puree—there should still be some whole beans for texture.
Transfer the mixture to a bowl. Cover the bowl and chill for 15 minutes. If the mixture is too wet, add the breadcrumbs and stir to combine.
Divide the mixture into 7 to 8 equal portions. Shape into tightly packed patties. Heat a large skillet over medium-high heat (add oil if desired). Place the patties in the skillet and cook for 4 to 6 minutes per side, or until golden brown. Alternatively, preheat the oven to 400°F (200°C). Place the patties on a medium baking sheet lined with parchment paper. Bake the burgers for 15 minutes, flip, and bake another 10 minutes, or until the burgers are golden.
