Bacon Flavored Roasted Chickpeas, people!
The idea for this recipe came to me over the holidays when I was making my Creamy Cauliflower Soup. Out of tofu and refusing to go to the store during the holiday rush, I went to the cupboards to see what I had on hand for an alternative bacon-flavored topping. And that’s when I found the chickpea!
I had only a few experience with roasted chickpeas but I couldn’t think of anything better than a sweet, smoky, and crunchy chickpea to add the perfect taste and texture to my cauliflower soup.
And thus, these Bacon Flavored Roasted Chickpeas were born.
Preparing yourself with quick grab-n-go snacks that are both filling and satisfying is probably my number one tip for a successful cleanse and therefore, since my cleanse began, I have made sure to always have a batch of roasted chickpeas around. They are a deliciously crunchy snack that satisfies some of my most intense cravings (that’s you, crackers and bread!) while being healthy, wholesome, high in fiber and protein, and completely versatile. There are endless flavor combinations for roasted chickpeas.
Some of the flavors I’ve tried so far are:
- Chili and Lime Juice
- Sea Salt and Rosemary
- Spicy Curry
- BBQ Ranch
- Ginger Wasabi
And friends, these have become some of my favorite snack foods and salad toppers the past 2+ weeks.
I’ve made these Bacon Flavored Roasted Chickpea a few ways. I began by making just a little bit of bacon flavored marinade (about 1/4 cup) to toss on the chickpeas right before roasting them.
I found, however, that marinading the chickpeas first and then draining most the liquid allowed the bacon flavor to soak in for a more intense sweet and smoky bite. The longer you can let the chickpeas soak in the marinade, the better. If you have time, I would recommend leaving them in there overnight before roasting them.
It’s worth the wait!

Let’s get roasting!
- 2 (15 oz) cans chickpeas, drained and rinsed
- 1/2 cup soy sauce
- 2 tbsp tomato paste
- 2 tbsp vegan Worcestershire
- 2 tbsp maple syrup
- 1 tbsp liquid smoke
- 1/8 tsp pepper
- 1 tbsp olive oil
In a shallow dish, whisk together the soy sauce, tomato paste, Worcestershire, maple syrup, liquid smoke, and pepper. Add chickpeas, making sure they are fully submerged, and marinate for at least 1 hour. Overnight is best.
Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper or a silicone baking mat and set aside.
Drain the chickpeas from the marinade, reserving 1/4 cup of the liquid. Blot the chickpeas dry then toss with olive oil and 1/4 cup reserved marinade. Spread evenly on the prepared baking sheet.
Bake for 35-40 minutes, stirring every 10 minute to allow for even cooking. Bake until brown and crunchy. Watch them closely the last few minutes to prevent burning.
Store in an airtight container at room temperature for up to 5 days.
